The Yo-Mix MY 800 from Danisco is a yogurt mixed culture. It provides a typical, strong yogurt taste. When added to cheese, it makes for a smoother dough. The MY 800 acidifies quickly up to a pH value between 4,7 and 4,6. Lower pH values can be achieved with slower acidification.
