Die Yo-Mix MY 800 von Danisco ist eine Joghurt Mischkultur. Sie sorgt für einen typischen, kräftigen Joghurtgeschmack. Als Zugabe im Käse sorgt sie für einen geschmeidigeren Teig. Bis zu einem pH-Wert zwischen 4,7 und 4,6 säuert die MY 800 schnell. Tiefere pH-Werte lassen sich bei verlangsamter Säuerung erreichen.
