Zum Haltbar machen von frisch gepressten Fruchtsäften. Sie füllen ihren Fruchtsaft sofort nach dem Pressen oder nach dem Klärvorgang in das Immervollfass, das sich am endgültigen Standort im Keller befindet. Das Immervollfass soll einen Durchmesser von 40 bis 80 cm und eine Höhe von max. 120 cm haben. Nun tauchen Sie den rostfreien Saftpasteur in ihren Saft, sodass er am Fassboden aufliegt (Safthöhe max. 100 cm). Strom anschließen (230V). Beim Gerät mit Thermostat die gewünschte Temperatur einstellen und schon ist die Arbeit erledigt. Sobald der Saft die gewünschte Temperatur (von ca. 80 – 85 °C) erreicht hat, das Gerät ausstecken. (Beim Gerät mit Thermostat schaltet das Gerät selbstständig bei Erreichen der gewünschten Temperatur ab). Jetzt legen Sie den Öldeckel auf die Saftoberfläche und gießen das önologische Öl zwischen Deckelrand und Fassrand direkt auf den heißen Saft, und zwar mindestens 10 mm. Das Fass mit dem Staubdeckel zudecken.
