Description
L’idea del vaso da fermentazione è antichissima: in Cina e in Corea per esempio si usava acidificare in tali vasi già migliaia d’anni fa. Il vaso di fermentazione è in gres. Viene cotta a 1200°C e ricoperta da uno smalto senza piombo. Pertanto non assume quasi nessun sapore ed è molto facile da pulire. Il vaso comprende anche due semicerchi di ceramica che, poggiate sopra le verdure, le comprimono e sono indispensabili per una corretta fermentazione. Appesantiscono il contenuto e allo stesso tempo proteggono dal deterioramento. Questi pesi non prendono alcun odore né sapore dal contenuto del vaso e non creano quindi alcun problema quando si cambia tipo di verdura.
