Lakeside Spinach is a smooth-leaf variety that produces high-quality, mild-tasting, slightly tangy leaves. This variety has good disease resistance. Spinach can be harvested at almost any time. For baby spinach, harvest after about 3 weeks and for mature spinach harvest anytime after 5 weeks. Harvest no more than 1/3 of the plant at a time to encourage regrowth. Spinach grows best in full to part sun with fertile, moist, well-drained soil. Keep the soil moist, not soggy as spinach will stop producing foliage if the soil is too dry. Spinach is a cool-season crop and grows best before and after the heat of the summer.
